The M Cheese, Tafi del Valle, traditional cheeses are produced under the wonderful climate of Tafi del Valle. Its manufacturing technique was bequeathed by the Jesuits 300 years ago. From there the inhabitants of the valley continued to apply the old recipes but over the natural evolution of technology and knowledge.
This allowed both years later, the cheese that originally manufactured the Jesuits, brought from the region of La Mancha in Spain, is transformed into local cheese, with personal and distinct characteristics, which we recognize as Tafi cheese. Therefore we can say that M Tafi cheese is one of the oldest and most historical cheeses between the Argentine cheese, making it unique.
